I'd like to start a list of low cal desserts for the summer time. I find that I've been craving sweets and my sugar free jello-o just isn't cutting it. Chocolate recipes are especially welcome!

I'll start it out:

Peanut Butter cup pudding
-1 cup sugar free/FF vanilla instant pudding
-1 tsp-1tbsp natural PB
-sugar free/lite chocolate syrup

wisk the PB into the pudding then drizzle the chocolate on top

Just buy the very best chocolate you can (Valrhona, for example), and savor one square slowly. Honest.

And while you're at it, check its ingredients against those of the fat-free/sugar-free/lite stuff.

I like to core an apple, slice it in thin slices,lay it on a plate, sprinkle cinnamon and very little powdered sugar on them, microwave for about one minute, they should be sort of soft, turn over, sprinkle some more, and microwave until soft. Like apple pie, for under 100cals.

This one is great!

2cups cold milk (Skim or lite soy)
1 envelope sugar free fat free INSTANT pudding mix
(The butterscotch flavor is awesome with cinnimon and nutmeg mixed in)
10-12 cubes of ice

Put contents in blender and grate the ice.

Serves two at 130 calories a glass
Depending on what percentage milk you use it could be more
If you use soy it could be less.

Go to kraft.com. There are all kinds of recipes using Cool Whip and Jello and fruit. If you use the light version of the Cool Whip & Jello, it's not too bad.

Of course, don't read the ingredients label for the Cool Whip...

Great Italian dessert: take fresh strawberries and drizzle with a very good balsamic vinegar and cracked pepper. Sounds odd but tastes amazing!

This one is really great. You can whip it up in 10 minutes and everyone likes it. Not too sure how light it is, but ....... it is good.

1 Angel food cake cut in squares
1 pktg. of light cream cheese
1 c. icing sugar
1/2 container of light cool whip
1 can of blueberry or cherry pie filling

Whip up, softened cream cheese with icing suger (i just use a spoon). Fold in cool whip. Fold in cut up Angel food cake.

Layer with cake mixture, thin layer of cool whip, and blueberries and repeat again.

Let sit in fridge at least a couple of hours.

I made this last night for a late birthday get together after a run with friends. There were 4 of us and we ate the whole thing.......mind you, her husband had two very large servings!! I think it's a nice dessert for 6-8 people.

From a free Kraft recipes "magazine" I get:

Key Lime Pie

Low fat graham cracker pie crust
2cups low-fat coolwhip
2T lime juice
1.5 tsp grated lime peel
1 pkg (4serving) sugar free lime jello
2/3 cup boiling water
1/2 cup cold water

Place lime jello powder in large mixing bowl, add boiling water and stir until completely dissolved (2 minutes or so). Add ice to cold water to make one cup, then add to jello and stir until ice is completely melted. Mix in lime juice and grated lime peel. With a wire whisk, fold in two cups coolwhip.

Cover bowl and chill until filling thickens somewhat, 15-20 minutes. Spoon into pie shell, cover, chill for four hours or so before serving.

Makes eight servings, approx 130cal per serving.


I've made this and it's really quite good. I used fresh limes - two medium ones are sufficient for the peel and juice.

Leveraging off of florie's post, a variation on that recipe I've seen uses sugar-free/fat-free instant vanilla pudding made with skim milk instead of the powdered sugar & cream cheese. Make the pudding and let it set in a seperate bowl in the fridge. Layer the angel food cake chunks and fruit with dallops of cool whip and dallops of the instant pudding.

I am definately going to try it that way LewJ........i make another dessert with 2 pktg. of choc pudding and 3 c. of skim milk.....it makes it nice a thick. Then i layer choc cake, cut in chunks, pudding, cool whip, (now the best part) skor bar, then repeat.
This dessert isn't as large as the choc cake one, so i figure one vanilla pudding and 1 c milk should do nicely.

My Dad used to make this dessert when I was a kid and it was a special treat especially during the summer when you wanted something icey cold on a scorching, hot day:

Strawberry Delight
---------------------------

In compote, parfait, custard or wine glass layer the following:

Coarsely crumbled low-cal graham cracker crumbs (about a few Tbsp), a few fresh or frozen strawberries, light or low-cal whipped cream (with a little sugar added but NOT very much ~ I like to make my own by buying low or nonfat whipping cream, whip it and add just a pinch of sugar, that's it --don't make it too sweet), repeat layers until you reach to the top of the glass. If you're serving guests, garnish with a mint leaf. After you're done layering, put the wine goblets or parfait glasses (or custard cups or whatever you use) in the freezer for about 1/2 an hour or so. Just so it's very frosty chilled but NOT frozen. Enjoy and bon apetit! Or, you can use a baking dish if you want to make extra servings.

Since I usually eat less during the summertime, I freeze grapes and eat that as my dessert. I eat summer fruits of the season as my dessert - peaches, plums, cherries, melons of all kinds, nectarines, etc. Yum. I like to stay slim 'n trim during the summer since eating and gaining weight makes me feel too hot and sweaty. If I'm thinner, I feel cooler.

i agree with the one square of chocolate... even though it's not "fancy" i like Dove Dark.

and...i am obsessed with making JELLO desserts. i just like it simple......whip up sugarfree jello w. the hot water and a cup of cold soy milk. i used orange jello the other day and was in dreamsicle heaven.

You can make this recipe WITHOUT sugar in the whipped cream , too.

Speaking of coolwhip...this is super easy.

Mix up a tub of coolwhip with 2 single size yogurts.
Spread into a graham cracker crust pie tin, and freeze.

Yum. My former roommate used to make this all the time when she was trying to lose weight for crew. For a bit richer flavor and not as low cal, use more yogurt and less coolwhip!

I also just freeze containers of yogurt -- 4oz ones are the perfect size for me.

Going along with the pudding threads, I've made a really good tiramisu before using SF/FF Pudding....

1 T. SF/FF Instant Coffee (like international foods)
--dissolve it in 1/4 cup hot water

3 c. skim milk
2 T. SF/FF Instant Coffee
1 8 oz. package FF Cream Cheese
2 packages SF/FF Vanilla Pudding

--Mix 1/2 cup of milk, coffee, and the cream cheese in a blender until combined. Add the remaining 2 1/2 cups of milk.

Dip ladyfingers (you can usually find them in the Italian section of the grocery) into the coffee/water mixture and line the bottom of bowl. Put 1/2 of the blender pudding mixture on top. I then sprinkle with either shaved chocolate or cocoa. Repeat the layers.

You can put cool whip on top of the whole thing if you want. I've also left the cofffee flavoring out and used either angel food cake chunks or ladyfingers with strawberries for a shortcake-like dessert.

The filling is AWESOME! i can eat it on its own. Plus, this makes a fairly big amount....

love this stuff....maybe I'll make some this weekend!

I made the Key Lime pie today and it was pretty good. The only problem I had was I didn't have ice so I think I added the coolwhip too soon before the jello had cooled enough and it kind of separated a little. But, still tastes good.

My advice is to have a little of something truly indulgent.

I find that a small piece of a PB brownie is a lot more satisfying than sugar free jello.

I also find that bitter sweet dark chocolate sooothes that dessert craving without adding artificial ingredients.(Aspartame, Splenda etc.)

Quick and easy, sort of like ice cream sammiches:

Lowfat graham crackers
FF Coolwhip

Take one cracker, break in two, spread some whip cream between them, freeze...

Here is another idea for bananas. Slice shorter side (the upper side of the "smile") half way through to the other side. Open banana slightly, and put in a pinch of butter, and a teaspoon of brown sugar. Place banana on a piece of foil with edges turned up. Prop up banana with toothpicks so it looks like a smile. Broil banana until banana is cooked (the skin will look burned). Use a spoon to eat banana directly from skin.

merienges (not sure I spelled that right)- the hard kind cookie kind you leave in the oven and turn the oven off, are amazingly low in calories, i have a great carmel coffee merienge recipe somewhere

another thing with bananas i remember from camping as a kid that isn't too bad for you are banana boats: slice the bananas down the middle and stuff with chocolate chips and marshmallows and chuck on the coals (or in the oven) until the banana gets all mushy and the chocolate melts.
